Amazing Potato Salad

This potato salad always turns out pretty awesome.  I’ve been craving it lately.  So, I thought I'd share the recipe with you again.
Excellent & Amazing Potato Salad
3 pounds potatoes
8 hard boiled eggs
1/2 cup chopped red onions
3/4 cup diced dill pickles
1/2 cup sliced black olives
Dressing: 1/4 cup mustard
2-1/4 cup mayonnaise or miracle whip
1/2 teaspoon pepper
1/2 teaspoon salt
Boil potatoes whole and unpeeled. Cool, peel, and cut into chunks. Peel, rinse and cut up the eggs. Toss the potatoes, eggs, onions, pickles and olives gently. In a separate bowl, mix the dressing ingredients. Add to the potato mixture and carefully stir to coat everything evenly. Keep refrigerated. Serves 8-10.

Sugar Crumb Crispy

Found this recipe on the Pinterest {here}.  Easy, delicious and fast, just as promised.  I did make a few changes, though :)

After I made the crumb mixture, it seemed like WAY too many floury crumbs for just 8 tiny crescent rolls.  There would have been a 3 inch layer of crumbs on there!  So I used 2 cans of rolls.  I would suggest cutting the crumb ingredients in half if you only want to use 1 can of crescents :)  
Here is 1/2 the crumbs on 1 can of rolls – still plenty of crumbs.

SUGAR CRUMB CRISPY
1/4 cup cold butter
1/4 cup sugar
1/4 cup brown sugar
1/4 tsp cinnamon
dash of salt
1/2 cup flour (I also cut back the flour slightly)
2 cans Pillsbury Crescent Rolls

Preheat oven to 400 degrees.  Cut in butter to sugars, cinnamon, and salt and flour to form crumbs.  On an ungreased cookie sheet, separate crescent roll dough into 16 triangles.  Sprinkle crumbs on top.  Bake at 400 degrees for 8-12 minutes.  Allow to cool slightly and then cut them into smaller triangles. 

GLAZE
1/2 cup powdered sugar 
1 Tbsp. softened butter
1-1/4 tsp. vanilla
1 to 1-1/2 Tbsp. milk
Blend together and drizzle over slightly cooled crispies.

Mini Greenhouses

It’s just a few weeks away from being warm enough to plant my little seedlings in the actual ground  :)  Because of our short growing season, most seeds need to be started indoors, but I quickly run out of room and have to shuffle plants onto the porch.  The porch is sheltered completely on the north and west and partially on the east, so they do fairly well there.  Even so, because daytime temps are 40’s and 50’s and nighttime temps frequently dip into the 30’s, they need some protection from wind and cold -- occasionally even snow!

My old method was a frame made from PVC pipe, covered in plastic.  It worked great, for the most part, but it was hard to cover in case of cold weather or snow and not portable. 

This spring, I have a new method to house the little plants until they can go into the garden..  I first saw these on Pinterest. . . here’s my version:

Just clear plastic storage boxes from Target, but they are working out so much better!!  I group the plants in them according to their cold tolerance.  That way I can pick up a box and pop in the house when it’s too cold for them.  It’s also easier to move plants around to find them more (or less) sun exposure.

The lids were all off the day these photos were taken, but they do add a lot of protection from wind and cold… like today, when the high was 39 degrees!
